Napa Valley & Sonoma County

Every wine Theorem makes comes from one of two mountains — where elevation, volcanic soils, and ocean air shape everything we do. We grow the grapes ourselves and pick by taste in small passes, keep each lot on its own, and use a light hand in the cellar, so the vineyard leads. No purchased fruit. No blends. Just the purest expression of what the mountain tells us each vintage — each bottle holds only a single grape varietal from a single vineyard.

Our Napa Valley estate wines come from Diamond Mountain in Calistoga, where heritage clones of Cabernet Sauvignon produce black-fruited, age-worthy reds of structure, depth, and patience: Voir Dire, Hawk's Prey, Decree, alongside a plush, structured Merlot. Our Moon Mountain vineyard sits on the Napa-Sonoma border, where Pacific crosswinds and shallow rocky soils give us a savory, spice-lit Syrah and whites that reset expectations — a crisp, mineral-driven Chardonnay and a vibrant, layered Sauvignon Blanc.

Winemaker Andy Jones leads the cellar with precision and patience. Each wine is its own study. What the mountain gives, the wine carries through — beautiful on release, and better with time. 

  • Voir Dire

    Voir Dire is the Cabernet that started it all. Meaning “to speak the truth,” Voir Dire is a tribute to owner Jason Itkin’s work as a trial attorney and a reminder that the truth often comes out after a glass (or two) of wine.

    Voir Dire is 100% Cabernet, produced exclusively from our original estate vineyard that was planted in 1985. These old vines, with their deep roots, produce a truly special Cabernet. The result is a complex and captivating wine that will continue to improve and age gracefully for decades.

  • Hawk's Prey

    Hawk's Prey is a Cabernet Sauvignon from our Diamond Mountain vineyard. The young vines in this block give us a wine similar in flavor profile to Voir Dire; however, Hawk's Prey is more vibrant, youthful, smoother, and more approachable at a younger age.

  • Merlot

    Our Diamond Mountain Merlot comes from a one-acre block our family planted in 2014. From the moment this wine touches your lips, it shows power, structure, and personality. Our Merlot tastes amazing now and will continue to evolve for years to come.

  • Syrah

    Our 2018 Syrah comes from a vineyard at the top of Moon Mountain District at 1,600 feet of elevation. The grapes are treated with warm days and cool nights. It's silky, voluptuous, and rolls over the palate with fine grained tannins and focused acidity.

  • Cabernet Sauvignon

    Our Moon Mountain District Cabernet Sauvignon is produced from our Moon Mountain Vineyard. The terroir features volcanic soils grazed by sunlight and crosswinds off the Pacific, producing a coastal Cabernet that is highly structured and concentrated.
